Honey Cake

  • 2 cups flour
  • 3.5 tsp baking powder
  • 1/2 tsp salt

cream together:

  • 1/2 cup shortening
  • 1/2 cup sugar

add:

2/3 cup honey

2 egg yolks

add flour mixture, alternating with 1/2 cup orange juice. Fold in egg whites, stiffly beaten. Sprinkle top with chopped nuts. bake 350 degrees for fifty minutes.

Phyllis’ Lemon Chicken

  • 3/4 scallions, thinly sliced
  • 4-5 sprigs of parsley – chopped fine
  • 1 lemon – peel off zest and slice thinly. render juice and save
  • 1-2 cups of cooked diced white chicken
  • chicken broth to cover (skim fat)

sprinkle oregono. Simmer for 10-15 minutes. Thicken sauce and serve.

Rocky Mountain Dream Bars

FIRST mixture:

  • 1/2 cup shortening
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1 tsp vanilla

Cream butter and sugar, add flour and vanilla. Pour in pan 9×9 or 8×13 – bake ten minutes at 325 degrees.

SECOND mixture:

  • 2 well-beaten eggs
  • 1 cup brown sugar
  • 2.5 T cake flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped nuts and 1 cup coconut

Add sugar to eggs and beat, add flour, baking powder and salt – add nuts and coconut and spread over first mixture. Bake 20 minutes at 350 degrees.

Crisco Brown Sugar Loaf

Measure into bowl:

  • 2.5 cups cake flour
  • 1 2/3 c brown sugar
  • 2/3 cup Crisco ™
  • 1 tsp salt
  • 3/4 cup milk

mix two minutes. stir in 3.5 tsp baking powder. add:

  • 1/2 cup milk
  • 3 eggs
  • 1 tsp vanilla

mix 2 minutes. Bake about 40 minutes at 375 degrees.

Kichel

3 eggs, 1 tsp sugar and a pinch salt. Combine and beat well. Add 1/2 cup oil and beat. Add 1 cup flour and beat. Bake teaspoonfuls at 400 degrees for ten minutes. Turn to 350 degrees and bake another 20 minutes.

Apple Crisp

Ingredients:

1 cup sugar
1/3 cup margarine
1 egg

MIX

1 cup flour
1/2 tsp baking soda
Dash salt
1 tsp cinnamon

MIX

2 1/2 cups diced apples
1/2 cup nuts or raisins

Combine and bake in a 9″ pan for 35-40 minutes at 350 degrees

Coffee Cake

  • 1/2 cup chopped nuts
  • 3 cups flour
  • 1 1/2 cup sugar
  • 3 T baking powder
  • 1 T salt
  • 1 cup shortening
  • 1 cup milk
  • 3 eggs
  • grated lemon rind
  • 3/4 cup raisins
  • 1 T lemon juice

Method

Sprinkle greased springform cake pan with chopped nut meats. Sift together into large bowl flour, sugar, baking powder and salt. Add shortening, milk, eggs, and grated rind. Beat 3 minutes, add raisins and lemon juice. Beat just enough to blend.

Bake in 350 oven for 1 hour

Boiled Tongue

  • 1 large onion
  • 1/2 cup vinegar
  • 6 bay leaves
  • 1 large clove garlic
  • 1 T whole mixed spice

Cold water to cover. Soak for one hour before cooking. Cook about 4 hours.

Peter Pan Cookies

  • 1 C spry
  • 1 C peanut butter
  • 1 C granulated sugar
  • 1 C packed brown sugar
  • 2 eggs
  • 1/2 t salt
  • 1 T milk
  • 2 C flour
  • 1 t baking soda

Preheat oven to 325 degrees.

Combine shortening, salt and peanut butter and mix. Add sugars, beaten eggs and milk. Sift dry ingredients and add.

Drop from teaspoon and press with fork to create designs. Bake 15-20 minutes.

Sour cream Cake

Ingredients:
2 cups flour1 tsp baking powder1 tsp baking soda

SIFT ABOVE DRY INGREDIENTS AND SET ASIDE
1/2 cup shortening (nana likes crisco)
1 cup sugar
3 eggs
1 T vanilla
1 cup sour cream

BLEND SUGAR AND SHORTENING
ADD EGGS ONE AT A TIME, ADD DRY INGREDIENTS AND SOUR CREAM

Filling:
1 cup brown sugar
1 cup nuts
2 tsp cinnamon
Put filling ingredients in separate bowl and drop 1 T of the cake batter in, crumble filling with batter in fingers. Grease pan, put 1/2 batter in pan, cover with 1/2 the filling, then add the rest of batter and the rest of the filling, on the top. (no info on temp of oven or how long).
